WC Recipe Day 14: Sweden

*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day.  Day 14 was a shock.  Germany the 2014 WC Champs bombed out with a lose to South Korea.  Sweden on the other hand won the group.

Swedish Meatballs with Red Cabbage

Swedish meatballs, also known as Kottbullar, were said to have been brought by King Charles XII after his exile in Istanbul in 1713.   They are characterized by the rich sauce that accompanies them.

Swedish Meatballs

Assembly 

1 pound ground beef

1/4 cup bread crumbs

1 tablespoon parsley

1/4 teaspoon allspice

1/4 teaspoon nutmeg

1/4 cup chopped onion

1/2 teaspoon garlic powder

1/2 teaspoon salt

1 egg

In a bowl combine all ingredients above.  Then roll them into 12 or so medium sized meatballs.

Cook

olive oil

4 tbsp butter

2 tbsp flour

2 cups beef broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 tsp dijon mustard

Salt and Pepper to taste

In a large skillet heat oil and brown meatballs on each side.  Transfer to plate or foil.

Add butter and flour to skillet.  Once it turns brown add beef broth and heavy cream.  Then Worcestershire and dijon.  Add the meatballs back and simmer so that the sauce thickens and until meatballs are 165 degrees internal temperature.  Serve with rice or noodles.

Red Cabbage

1 red cabbage (sliced thin)

4 tablespoon butter

1/3 cup white vinegar

1/3 cup water

1/2 tablespoon sugar

1 teaspoon salt

1/4 cup jelly (current or grape)

2 tablespoons grated apple

Preheat oven to 325 degrees.  Melt butter in dutch oven.  Saute cabbage 2 minutes.  Add vinegar, water, sugar, and salt and cook 2 minutes.

Cover the dutch oven and leave in oven for 2 hours.  Then take out and add jelly and grated apple.  Mix together.
