*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day. Day 12 began the the last games of the group stage. The early games were already decided with Russia and Uruguay already clinched. Iran made it exciting in the later games but in the end Spain and Portugal the favorites of the group moved on.
Egyptian Spiced Prawns and Couscous
Egyptian food tends to favor vegetarian meals and often is made up of legumes and vegetables. In Alexandria and the coast of Egypt they use great deal of fish.
Garlic (3 cloves crushed)
Paprika (1 tbsp)
Cumin (1 tbsp)
Ginger (fresh grated)
Place garlic in heated oil. Saute for 2 minutes. Add paprika, cumin, and ginger and combine. Stir in shrimp and salt. Cook until done. Add chopped cilantro.
Vegetable Broth (2 cups)
Couscous (2 cups)
Garlic (3-4 cloves minced)
Shallot (1 minced)
Sun Dried Tomatoes
Bring vegetable broth to slow boil and add couscous. Add salt. Add olive oil if needed. Toast pine nuts and add to mixture.
In a separate sauce pan heat oil and cook the garlic and shallots until soft. Add to couscous. Chop olives, sun dried tomatoes, and parsley and add. Stir together. Serve with the prawns!
