WC Recipe Day 11: Poland

*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day.  Day 11 saw England score 6 goals on Panama and Poland get eliminated from the knockout round by Columbia.

Pierogis with Polish Apple and Leek Salad

Pierogis are essentially Eastern European dumplings that are often associated with Poland however have origins in other countries.  Its origin is disputed with some believing it was brought through China by Marco Polo and others who say that Saint Hyacinth of Poland who brought them from Ukraine.

Fresh Pierogis

Oil

Onion

Chop onion and heat with oil in pan on stove top.  Crispy the fresh pierogis 1-2 min on each side until done.  Serve warm with sour cream.

Apple and Leek Salad

2 leeks (white part only)

2 apples

Juice of one lemon

1 tablespoon Honey

1 tablespoon Olive Oil

Salt

Chop thinly the leeks and apples and add to bowl,

Add honey, lemon juice, olive oil, and salt.  Dress salad.  Put in refrigerator for one hour then serve.
