WC Recipe Day 9: Iceland

*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day.  Day 9 saw a lifeline thrown to Argentina with Nigeria’s 2-0 win against Iceland.  Switzerland also had a dramatic stoppage time goal to win their game verses Serbia.



Plokkfiskur or “Icelandic Fish Stew” is one of the oldest and most traditional Icelandic dishes.   It is a cream based soup with a combination of fish, potatoes, and other vegetables.

Cod or Haddock





Well first I was pumped that I was able to get cod actually from Iceland!

Melt 2 tablespoons of butter in heavy bottom bowl.  Chop onions, celery, carrots, and garlic and add to melted butter.  Sweat onions until translucent, about 5 minutes.  Add 1/2 cup of white wine and simmer until reduced by half, about 5 minutes.


Add 1 liter of chicken stock and chopped potatoes.  Cook simmering for 20 minutes until potatoes are soft.

Then, cube the cod into 1 inch pieces.  Chop 1 medium sized tomato.  Add them to the pot and simmer for another 5 minutes.  Then add 2 cups of cream and turn heat off.  Add parsley to garnish.  Serve with bread.
