WC Recipe Day 8: France

*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day.  Day 8 saw France punch its ticket to the knockout round and Argentina’s collapse against Croatia.

Coq au Vin

Coq au Vin is a iconic French stew where chicken is braised in wine, mushrooms, garlic, carrots, and more.

Bacon

Olive Oil

Chicken (skin on, bone in thighs and legs)

Onion

Mushrooms

Garlic

Carrot

Red Wine

Chicken Stock

Thyme

Butter

Flour

Add bacon to large pot or dutch oven that has been heated with a bit of oil.  Crisp about 10 minutes.  Then remove and set aside.  Take chicken and brown the both sides making skin crispy then remove.

Chop up onions, carrot, mushrooms, and garlic and add to the pan.  Allow to soften.  Then add 1/2 bottle of dry red wine.  Let simmer 5 minutes.

Then add 1-2 cups of chicken stock and bunch of thyme.  Cover and place in oven at 350 degrees for 45 minutes.

Take out of the oven and place on stovetop under low heat.  In a separate bowl, add 1 tbsp of soft butter and 1 tbsp of flour and mix together.  Add the mixture to the broth to thicken.  Serve with crusty bread.
