*Note: Each day of the group stage of the World Cup 2018 I will be making a meal from one of the countries playing that day. Day 6 was the day of surprises. Japan upset Colombia, Senegal beat Poland, and Russia continued its goal scoring winning 3-1 against Egypt.
Ramen is a classic Japanese noodle soup served in a meat broth. Almost every region in Japan has its own variation of ramen which can be made with several types of meats and additions.
Mirin (a sweet rice wine, if need to substitute just mix together 1 tablespoon of sugar with 1/2 cup white wine)
Take chicken and season with salt. Heat olive in pan and brown on both sides. Then place in oven at 325 degrees for 20 minutes and remove.
For the broth, heat oil in large pot add 2 tablespoons fresh garlic and ginger until soft. Add mushrooms, then 3 tablespoons of soy sauce, 2 tablespoons of mirin (or substitute mixture). Let cook for 1 minute. Then add 4 cups of chicken stock. Cover and bring to boil. Then take the cover off and let simmer for 10-15 seasoning with salt to taste.
Cook noodles per box instructions. Now time to build the ramen bowl. Add broth to bowl. Chop chicken into small pieces and add. Chop scallions to put on top.
